SushiDog Head Office

London•To be discussed•Full time•Temporary

Role Overview

As part of the Ops team, you take overall responsibility for every New Site Opening: ensuring it is set up correctly and run successfully by communicating clearly between the Ops and Head Office teams and supporting the management team to exceed expectations. Above all, you drive exceptional operations at every opening. Ensuring the high standards we are all looking for requires the Openings Manager to excel in three key areas – Pre-Opening, Shop Set Up and Opening the Doors.

The SushiDog Openings Manager is driver of excellence. Every opening is a shop window for the brand. Your job is to bring excellent time management and excellent communication skills to every project, so nothing is left to chance: equipment on, systems tested, teams trained, and the shop ready to deliver from day one.

Key Responsibilities & KPIs

  • Safety & Standards - Safety first, always. Every opening meets food safety, H&S and brand standards from day one; audits passed; issues owned and closed before handover. Target: 95%+ on all safety audits and standards.
  • Quality - Guest experience is on track from the first day of trade: minimum 10 reviews per week, with an average score of 4.9 or above; consistency the goal, no soft weeks.
  • Commercial (Sales & Labour) - Deliver the sales plan and the labour plan for every opening; disciplined deployment and control from the outset, protecting profit, not cutting corners.
  • Handover Readiness - All equipment on site, installed and fully functioning; every system and piece of tech live and tested; the activity planner complete and fully plotted out, ready for the manager to run with from day one.
  • Time & Communication - Excellent time management against the countdown plan; clear, proactive, two-way communication between Ops, Head Office and the store team throughout.

Pre-Opening Tasks

  • Coordination: support the coordination of resource needed to successfully
  • open a new shop.
  • Fixed items & contracts: arrange installation of all fixed items (tills /
  • phones / fire extinguishers) against the countdown openings checklist; book
  • in all contracts required.
  • Supply chain: order all necessary equipment and packaging; plan delivery
  • and ordering schedules.
  • Planning: manage the NSO opening pathway planner, start to finish.
  • Recruitment: support hourly-paid recruitment with the GM, Ops and
  • People Team.
  • Training & marketing: work with the People/L&D Team to coordinate the
  • team and schedule for opening training and local marketing activity.

Site set-up

  • Office & shop set up: organise and take full responsibility for the set-up of
  • the new opening.
  • Tech & systems: ensure all tech and systems are installed, live and
  • working.
  • Health & safety: all regulations are adhered to and set up in full.
  • Checklists: ensure evacuation procedure, fire plan, staff files and all set-up
  • checklists are done by the manager.
  • Stock & rotas: stock levels managed and first stock done with the GM;
  • rotas planned and team uploaded onto systems with relevant paperwork.
  • Support: support the training manager in coordination of space, material
  • and team.

How we expect you to show up

Excellent communication - Clear, honest, two-way, between Ops, Head Office and the store team.

A can-do mindset - Approaches problems with solutions, not blockers.
